Biscardo Ripasso Valpolicella Superiore is a wine that stands out for its quality and expression, made from Corvina, Molinara and Rondinella grapes, which are the base varieties for the great wines of Verona, including Valpolicella, Ripasso and Amarone. The vineyards are located in the hills near Verona, at an altitude of approximately 150 to 250 metres above sea level. The grapes are harvested by hand and placed in wooden crates, usually during the early morning or late at night, to avoid the intense heat they might receive during the day.
The vinification process begins with the rapid arrival of the grapes at the winery, where they are carefully sorted and selected. Fermentation takes place in small oak barrels at controlled temperatures. Subsequently, in January and February, the wine is put in contact with the noble Amarone skins, which strengthens the structure of the wine, enriching it with fragrances and complex tannins. The wine is then aged in oak barrels for 12 months.
