The process begins with a gentle pressing of the grapes to remove the stems, followed by the separation and cleaning of the must from the skins. The first fermentation takes place in steel tanks, where selected yeasts are added. Using the Martinotti method, the second fermentation takes place in hermetically sealed vats at a controlled temperature of 14°C, thus preserving the primary aromas of the grapes. At the end, the wine undergoes a process of cold stabilisation, filtration and subsequent bottling. This ensures the quality and distinctive characteristics of this wine.
