Cava Mirgin Opus is a Qualified Cava made by Alta Alella with 60% Chardonnay - 40% Pansa Blanca.
Made with a selection of organic grapes from Paraje Vallcirera: Chardonnay & Pansa Blanca, which allow a good ageing. Extraction of the free-run must by means of a very light pressing. The Chardonnay variety is fermented in second year French oak barrels, while the Pansa Blanca is fermented in stainless steel tanks. After four months, the coupage is made and the Méthode Traditionnelle Champenoise is applied with a minimum ageing of 36 months. It is sold freshly disgorged.
Tasting Notes of Cava Mirgin Opus
Sight- Bright golden colour.
Nose- Aromas of ripe white fruit and flowers with nutty undertones, enveloped by the minerality and salinity so typical of the area.
Palate- Opulent, balanced and structured, recalling aromas of ripe fruit and nuts. Well-marked acidity very well integrated with the flavours from the ageing and fine, persistent bubbles. Very tasty and long aftertaste.
