El gordo Del circo Blanco 2021

El Gordo del Circo is born from old vineyards in the Pagos de Cuesta Redonda, Campo Viejo and La Vercera, located in Olmedo, in the province of Valladolid, where Verdejo expresses all its character. The harvest took place during the first week of September and in the early hours of the day so that the grapes entered the winery with the lowest possible temperature (around 8oC). Once the grapes have been received, a maceration is carried out for 2-3 days and after this the very little aggressive pressing of the grapes. For the production of this wine, only the yolk and first-pressing must is used. This must has been introduced for its alcoholic fermentation in French oak barrels and after it, it has remained in them for 3 more months until its perfection in aging with its fine lees and weekly batonages.
