Fai un Sol de Carallo is an exceptional wine from D.O. Ribeiro, made from the native Galician grapes treixadura (88%), godello (7%) and albariño (5%) by Bodegas El Paraguas. With a limited production of 776 bottles, this wine has been aged for twelve months in a new 600-litre French oak Burgundian barrel.
The vineyard of Bodegas El Paraguas, located in Ribadavia (Ourense), at altitudes ranging between 67 and 104 metres above sea level, is characterised by sandy soils with a granitic base. The climate, mild with an Atlantic and continental influence, provides ideal conditions for growing grapes.
The production of Fai un Sol de Carallo is carried out meticulously. Bunches are selected from the best vines of La Cabrita's own vineyard, planted in 1892, and fermented in a single 600-litre oak barrel, carefully selected from a small forest in Burgundy. After ageing for twelve months in new barrels, the wine has been refined in the cellar.
Tasting Notes of Fai un Sol de Carallo
This wine has a beautiful straw yellow colour with golden hues.
On the nose, it displays a complex aromatic range that combines notes of oak ageing with delicate spicy hints and reminiscences of woodwork. As it develops, the citrus aromas of grapefruit and mandarin are seductive, perfectly integrated with notes of white fruits such as pear and conference apple, together with floral nuances and a mineral and saline undertone that reflects the best of the Galician character.
On the palate, it is full-bodied, complex and with a very unctuous entry. The palate is long and elegant, combining fruit and minerality with the notes of barrel ageing. The aromas of white and citrus fruits, as well as floral aromas, unfold throughout the subtle passage. The aftertaste is long and leaves a pleasant memory that invites to repeat the experience.
