Guímaro San Pedro is a red wine from the Ribeira Sacra D.O. produced by Adegas Guímaro with Mencía from vineyards of different plots in the area of Amandi, in San Pedro de Baños, with more than 65 years of age and on slate soils with iron, quartz and mica.
The grapes are harvested by hand, with 40% of the grapes being scraped off and then fermented in the traditional way. Aged for 18 months in oval foudre of 3.000 litres.
