Origin Javier Sanz 1863 White 75cl.

The V1863 wine comes from El Pago de Saltamontes, an area of 2.27 hectares of pre-phylloxeric vineyards in glass, belonging to the family for four generations. This payment was registered for the first time in 1863, hence its name, and it is known that it is more than 150 years old.

Viticulture Javier Sanz 1863 White 75cl.

The old vineyards of El Pago de Saltamontes are cultivated in glass and have a very low yield of approximately 1,400 kg per hectare. Production is very limited but of exceptional quality. The harvest is manual, which allows a first selection of the grapes in the vineyard itself, which guarantees the quality of this select wine.

Vinification Javier Sanz 1863 White 75cl.

The elaboration consists of extracting its full potential, particularly the fruit flavors, typical of the variety, followed by a short maceration process, to perfect its aromas and freshness, and finally, it is aged on its fine lees for several months, prior bottling.

Tasting Notes Javier Sanz 1863 White 75cl.

It shows a beautiful golden yellow color with bright tones in a thin layer. Its nose is reminiscent of candied orange peel, bread dough, reminiscent of fennel and aromatic herbs. It is exceptionally smooth and creamy on the palate, with moderate acidity and a long, pleasant finish. The aging on the lees gives this wine an exquisite creaminess and a smooth mouthfeel.

Pairing Javier Sanz 1863 White 75cl.

The texture and body of this wine allow it to be accompanied by more elaborate, spicy and tasty dishes, without forgetting vegetables, rice and fish. It can even be paired with a roast beef. The recommended consumption temperature is between 8 and 10 degrees.

The Bruñal grapes with which this wine is made come from Arribes del Duero, adapted to the terroir of the La Seca vineyards (Valladolid). The soil where these vineyards are located is composed of poor soils with a pebble surface and clayey subsoil, factors that give the wine a mineral touch. The climate is continental with very cold winters, rains during spring and autumn, and summers with very high daytime temperatures and drops of up to 20 ºC at night. This marked continentality makes the grapes retain their acidity and the aromatic compounds that develop during the day.

Tasting notes We recommend serving it When the grapes reach their optimum degree of maturity, they are harvested by hand and a first selection of the bunches is made in the vineyard itself. After destemming, they are concealed in stainless steel tanks, where they macerate with periodic pump-overs to increase the phenolic and aromatic richness of the wine. Alcoholic fermentation takes place at controlled temperatures below 24ºC, and then the wine goes to French and American oak barrels where it undergoes malolactic fermentation and the wine is aged for four months.

Tasting notes Javier Sanz 1863 Blanco 75cl:

Cherry red, with purple edges, clean and bright. On the nose it has a great intensity of red fruits, integrating with the toasting of the wood and very mineral touches. In the mouth it is fresh, with a very good acidity that is integrated from the beginning to the end. A very meaty and sweet wine.

Serving temperature: 14- 16 ºC It is an excellent wine to accompany a wide range of dishes, such as grilled meats, sausages, seasoned rice and different types of cheeses.
