Selection of old vineyards of low production from the high slopes of the foot of the Moncayo, in Aragon, hsta the Warmest lands by which the Queiles River runs, already in the community of Navarra.
Fermentation and maceration in vats of 15,000 kilos at a temperature of 28 degrees, for 3 or 4 weeks. Malolactic fermentation in new French oak barrels, from a selection of fine-grained wood s. A weekly batonage is carried out, and the barrels are individually controlled.
Aged for 16 months in new French oak casks.
