Mechanical harvesting is carried out on cool nights and it is made in stainless steel tanks until almost the end of alcoholic fermentation, ending this process in first-use French oak barrels with very light toasting.

It remains aged on its lees for six and a half months. It is filtered by 2 microns and is bottled, remaining in the bottle for three years. With an exclusive production of only 480 numbered bottles in the 2012 vintage and 1000 in the 2013 vintage, El Sosiego by Finca Las Caraballas is a whim born from the pact between the earth and man.
