Verdil de Gel is a white ice wine produced by Bodegas Enguera with Verdil in the D.O. Valencia.
The whole bunches are kept in cold storage at -10ºC for 15 days. The freezing of the pulp breaks the skins, releasing the aromas that give Verdil de gel its unique character.
Fermentation is stopped when the wine has reached 8.5% vol., at which point the fermentation aromas are at their peak. The residual sugar in Verdil de gel comes from the natural sugar in the grapes that has not fermented.
Verdil de Gel Tasting Notes
Straw yellow colour, clean and very pretty.
Very expressive nose reminiscent of white flowers, jasmine and orange blossom. Sweet aromas, honey, cinnamon. There is also a citrus background and delicate notes of apple.
Excellent balance, sweet wine but not cloying, fine and very elegant. Good acidity that keeps the wine balanced between sugar and alcohol.
