Domaine Matrot Volnay 1er Cru Santenots is a red wine made in Burgundy with Pinot Noir by Domaine Matrot.
Direct from Les Santenons -one of the premier cru of Burgundy- comes Domaine Matrot Volnay 1er Cru Santenots, a red wine made in Meursault. This wine is born in vineyards over 30 years old, in the A.O.C. Mersault area. Specifically, it originates in Les Santenots, a plot on the edge of this region, very close to the border with Volnay. Its production begins with the manual harvest and the processing of the grapes in the cellar, where all the bunches are completely destemmed. This grape paste is then vatted and left to settle at a low temperature for three to six days. After this time, Domaine Matrot Volnay 1er Cru Santenots will start fermenting from the indigenous yeasts found on the skins of the grapes. This process, which will last between 12 and 18 days, will be followed by ageing on its lees in French oak barrels and then in stainless steel tanks.
Domaine Matrot is located in the village of Meursault in Burgundy, right in the heart of the Côte de Beaune. It was established in the early 20th century by Joseph and Marguerite Matrot, and has remained in the hands of the Matrot family ever since.Today, Domaine Matrot encompasses 23 hectares (equivalent to 56 acres) of vineyards stretching across Meursault, Puligny-Montrachet, Auxey-Duresses, Monthelie and Maranges. This includes plots in the renowned Premier Cru Charmes and Perrieres vineyards in Meursault. Since 2000, all of Domaine Matrot's vineyards have been farmed exclusively by organic methods, in a gradual process that began in 1976.
