Don Zoilo Amontillado is a sherry wine produced by Williams & Humbert with the Palomino variety.
First yolk must from the best vineyards, cold static decanting and fermentation at 22ºC. Dynamic ageing and ageing system, classic Jerez Criaderas and Soleras, by the 12th criadera where the biological ageing takes place under the veil of flor in traditional oak casks, preferably American oak casks of 30 and 36.
Ideal as an aperitif with a good cheese, ham and seafood.
Don Zoilo Amontillado Tasting Notes
Wine with a colour between very old gold and amber, very bright. Very sharp, intense and complex aroma with slight hints of the fino that it was and hazelnut nuts. Dry, with just the right amount of acidity, full-bodied and with a very elegant and persistent character on the palate, tremendously expressive retronasally and not easily forgotten.
