400 Conejos is a Mexican Mezcal made in Oxaca, with 100% Espadín agave using traditional methods.
Only the best espadín agaves are hand selected after being meticulously cultivated. After selection, the agaves are harvested and cooked in traditional cone-shaped wood-fired ovens. The wood is lit and volcanic rocks are placed on top in the shape of a pyramid. Finally, the agave-filled oven is covered with cloth and earth and baked for 3 to 5 days. Once cooked, they are ground with a stone and stored in a wooden vat where they begin their fermentation process. 400 Conejos mezcal is distilled twice in copper stills and then bottled for enjoyment.
400 Conejos has been recognised with awards and top honours in some of the world's most prestigious competitions. Among its most recent awards are:
