Description
Pago la Jara is the undisputed crown jewel of the Compañía de Vinos Telmo Rodríguez in the prestigious Toro Designation of Origin.
This exceptional red wine represents the maximum expression and purity of the Tinta de Toro variety, coming from a unique vineyard of barely 4 hectares that is divided into five meticulously selected plots in the historic vineyard area (pago) that gives it its name. The old vines, with an average age that comfortably exceeds 50 years, are cultivated following traditional methods of organic viticulture and very low intervention, with low-density bush-trained vines and, in some exceptional cases, preserved on ungrafted rootstock since the pre-phylloxera era.
The soil of the area, composed mainly of pebbles, gravel, and sand at an altitude of about 700 meters above sea level, provides a unique minerality and optimal drainage that are directly reflected in the tremendous concentration and complexity of the grape. The harvest of this vintage was carried out entirely by hand in small boxes to avoid damage, with a rigorous bunch-by-bunch selection on the sorting table.
In the winery, the grapes, which are not completely destemmed to provide a noble tannic structure and additional freshness, ferment exclusively with indigenous yeasts in oak vats with a capacity of 3,000 kilos. Subsequently, the wine is aged for 18 months in 225-liter French oak barrels and 1,500-liter foudres, achieving a perfect balance between the untamed power characteristic of Toro and a silky, sophisticated, and highly polished elegance.
With an extremely limited production of only 4,032 numbered bottles, Pago la Jara is a world-class collector's wine, designed to endure and evolve magnificently in the bottle over the coming decades, becoming a benchmark of Spanish wine luxury.
Tasting Note of Pago la Jara:
Visual phase: Very intense, almost opaque cherry red color, with violet rims that denote its youth and excellent concentration.
Olfactory phase: Complex nose with great aromatic intensity. Notes of ripe black fruit (blackberries, plums), dried figs, balsamic hints of menthol, cocoa, graphite, and subtle toasted notes of perfectly integrated noble wood stand out.
Gustatory phase: On the palate it is powerful, fleshy, and concentrated, but with a surprising balance and freshness. It presents very fine and polished tannins, a silky texture, and a long, persistent, and elegant finish with mineral memories.

Service Protocol
It is recommended to serve at a temperature between 16°C and 18°C. It is highly advisable to decant the wine at least one hour before consumption to allow it to open up and express all its aromatic complexity.
It pairs perfectly with roasted red meats, big game, structured stews, acorn-fed Iberian cured meats, and cured sheep's cheeses.
