Description

Clay Xarel.lo Blanco Orgánico represents a true masterpiece of modern oenology that pays deep tribute to the most ancestral winemaking techniques. This exceptional white wine, conceived for fine dining and the most demanding palates in the luxury retail sector, stands out for its ageing in traditional 1,000-liter clay amphorae, an ancient method that allows perfect micro-oxygenation.

The philosophy behind this project is one of minimal intervention, seeking to faithfully reflect the full potential and authenticity of the Mediterranean terroir. Cultivated in selected plots of old vines at an altitude of approximately 800 meters, this Xarel.lo benefits from a Mediterranean climate with significant temperature variation that favors slow and balanced ripening. The clay soils, which optimally retain moisture during the hot summer months, provide the wine with unmistakable structure and minerality. The entire vineyard is managed under strict organic farming principles, ensuring absolute respect for biodiversity and the natural environment.

In the winery, production follows a meticulous process. After manual harvesting, the grapes undergo a long cold maceration to extract the maximum aromatic expression from the skins. Alcoholic fermentation takes place exclusively with indigenous yeasts, preserving the unique identity of the vineyard. Afterwards, the wine rests on its fine lees in clay amphorae for three months, gaining volume, creaminess and an incomparable silky texture. In addition, it is suitable for vegan and vegetarian diets, as clarification is carried out with mineral and plant-based products.

Tasting Note of Clay Xarel.lo

Appearance: Bright lemon yellow with greenish reflections.

Nose: Intense and complex, highlighting aromas of ripe white fruit, stone fruit, citrus and delicate notes of white flowers, with subtle tropical, herbal and aniseed hints.

Palate: Fresh attack, with a saline and mineral progression and perfectly balanced acidity that leads to a long and persistent finish.
