This extra virgin olive oil is the result of a heroic project that seeks to recover the agricultural heritage and native varieties of the region. The estate, situated at an altitude of 400 meters and surrounded by an unparalleled forest environment with views of the Mediterranean Sea, provides a unique terroir where the olive trees grow on dry stone terraces.
This privileged environment gives Tossut Foraster an unmistakable character and exceptional quality. Made from a masterful coupage of traditional varieties such as Blanqueta, Alfafarenca, and Mançanella, with a subtle touch of Arbequina, this early harvest EVOO is harvested green to preserve all its organoleptic properties and its high content of antioxidant polyphenols intact. The extraction process is carried out using a forced cold system at a controlled temperature of 19ºC, thus guaranteeing maximum purity and the most faithful expression of the fruit.
