Dominio de la Vega Nº1 Macabeo Brut is an exceptional organic cava that represents the avant-garde of sparkling wines from the Utiel-Requena region in Valencia.
Made entirely from the Macabeo variety (100%), this cava is the first certified organic sparkling wine from the prestigious Dominio de la Vega winery, a pioneer in the production of high-quality cavas in the region. The grapes come from selected vineyards located at an average altitude of 700 meters above sea level, in the southern area of the Vega del Río Magro. This unique terroir, characterized by clay-limestone soils and a continental climate with a marked Mediterranean influence, provides extraordinary freshness and natural acidity to the grape.
The harvest is carried out manually and strictly at dawn to preserve aromatic integrity and avoid oxidation of the fruit. In the winery, the traditional method (champenoise) is applied with painstaking care: after a gentle pneumatic pressing, only the free-run juice is used (with a yield of 40%). The first fermentation takes place at a low temperature (16ºC), followed by aging on lees for at least 12 months in the darkness of the winery's underground cellars.
The result is an organic, silky, elegant cava de guarda with highly integrated bubbles that reflect absolute respect for the environment and the technical mastery of a family winery committed to sustainability. Tasting Note of Dominio de la Vega Nº1 Macabeo Brut:
Visual Phase: Pale straw yellow color with subtle greenish reflections. It presents very fine, elegant, and continuously released bubbles, forming a persistent and delicate crown on the surface.
Olfactory Phase: Nose of great frankness and harmony. Fresh aromas of ripe white fruit (green apple, water pear) and citrus notes of grapefruit stand out in the foreground. After a few seconds of aeration, subtle hints of dried fruits, fine bakery, brioche, and a saline mineral background derived from its aging on lees emerge.
Gustatory Phase: Extremely fresh entry into the mouth and of excellent constitution. The carbon dioxide is perfectly integrated, providing a silky texture and pleasant creaminess. The palate is balanced, with a lively acidity that enhances its freshness, culminating in a long, slightly oily finish with an elegant bitterness characteristic of the Macabeo variety.
