Description

The Poley Oloroso en Rama Solera 15 Años from Bodegas Toro Albalá is one of the most singular and representative jewels of the Montilla-Moriles Protected Designation of Origin.

Made exclusively from grapes of the Pedro Ximénez variety, this fortified wine breaks with traditional patterns by not requiring additional alcoholic fortification, reaching its 17.5% vol. completely naturally thanks to the concentration of sugars and evaporation during its prolonged aging.

Founded in 1844 in Aguilar de la Frontera, the mythical Toro Albalá winery has managed to preserve the legacy of Andalusian fortified wines under the technical direction of Antonio Sánchez. The Pedro Ximénez grapes come from their own vineyards located in estates of exceptional quality, characterized by their albariza soils (chalky and white terroir that retains moisture optimally during the hot summers of Córdoba).

After a meticulous manual harvest at the end of August, the finest free-run musts are selected to begin a strict oxidative aging. This oloroso en rama ages for an average of 15 years in American oak casks using the traditional system of criaderas and solera. By being bottled 'en rama' (without aggressive filtering or clarifying), the wine retains all its purity, complexity, and organoleptic richness intact.

The result is a fortified wine with a dry, saline, and deeply structured profile, which pays tribute to the ancient Arabic name of Aguilar de la Frontera ('Poley'). It is a cult wine for sommeliers and collectors looking for the maximum expression of the Andalusian terroir. The prolonged oxidative aging in the historic cellars of Toro Albalá allows oxygen to interact slowly with the wine through the pores of the wood, providing an unparalleled aromatic complexity and a velvety texture on the palate.

Tasting Note of Poley Oloroso en Rama Solera 15 Años:

Visual Phase: Bright mahogany color with old gold rims and a dense, slow-evolving tear in the glass.

Olfactory Phase: High and complex aromatic intensity. Notes of noble wood and old American oak stand out, accompanied by hints of toffee, candied nuts (walnuts, hazelnuts), subtle smoke, vanilla, and a background of dry leaves and blonde tobacco.

Gustatory Phase: On the palate it is dry, broad, and very structured. It presents a silky entry that quickly gives way to a pleasant salinity and an elegant bitterness. Persistent finish with retronasal hints of cocoa, dried fruits, and seasoned wood.
