Description

Recaredo Finca Serral del Vell is an exceptional terroir sparkling wine that represents the maximum expression of biodynamic viticulture in the Penedès region, protected under the prestigious collective brand Corpinnat.

Crafted by the historic family winery Recaredo, located in Sant Sadurní d'Anoia, this long-aged Brut Nature is a sincere tribute to the limestone landscape and the patience of time. It comes exclusively from Finca Serral del Vell, a geologically unique site of great beauty, characterized by loamy-textured soils with a high presence of limestone nodules and a unique microclimate guarded by the imposing Montserrat mountain.

The blend of this vintage is mostly composed of 85% Xarel-lo and 15% Macabeo, Mediterranean varieties from dry-farmed estate vineyards. The winery applies the principles of biodynamic agriculture certified by Demeter, going a step beyond conventional organics by encouraging spontaneous plant cover that regulates water and enhances soil biodiversity. The production follows an uncompromising artisanal rigor. After a meticulous manual harvest, a part of the Xarel-lo ferments in oak barrels to provide structure. The second fermentation in the bottle is carried out using a natural cork stopper, a key sustainable element for micro-oxygenation during its extremely long aging on the lees, which in this vintage exceeds 90 months (more than 7 years in the cellar).

The process culminates with manual riddling in traditional desks and manual disgorgement at the cool temperature of the cellars, performed in an artisanal way without freezing the neck of the bottle. Being a strict Brut Nature, no dosage sugar is added, guaranteeing absolute transparency and a markedly gastronomic, dry, elegant profile with extraordinary longevity in the bottle.

Tasting Notes of Recaredo Finca Serral del Vell :

Visual phase: It presents a bright and luminous golden color, with an extremely fine, persistent, and slow-evolving bubble that forms a delicate rosary.

Olfactory phase: It stands out for its great aromatic intensity and seductive complexity. Initially, it displays notes of ripe white fruit (green apple, pear) and fresh citrus touches, which quickly give way to balsamic nuances, cut fennel, and Mediterranean herbs. In the background, rich creamy reminiscences emerge, along with toasted nuts, fine bakery, and subtle mineral notes of chalk.

Gustatory phase: Lively, fresh, and highly elegant entry. It shows a creamy texture and a glyceric character that provides volume and a gentle density, balanced by a vibrant acidity and a very clean drying sensation. The finish is long, persistent, and slightly bitter—a characteristic hallmark of Xarel-lo—with a mineral and toasted aftertaste.

Service Protocol

Recommended serving temperature: Between 8 and 10 degrees Celsius. It is advised to open the bottle a few minutes before consumption to allow it to oxygenate and unfold all its aromatic complexity.

Use white wine glasses of good width (such as Riedel Veritas Pinot Noir or wide-bodied sparkling glasses) instead of the classic narrow flute glass, to better appreciate its volume and sensory richness.

Ideal pairing with baked white fish, grilled seafood, brothy rice dishes, acorn-fed Iberian ham, cured cheeses, and Japanese cuisine dishes such as sushi.
