Description

The Vin de France Savagnin Le Noyer by Pierre Girardin is an extraordinary and extremely limited-production white wine that builds a perfect bridge between the prestigious winemaking worlds of Burgundy and the Jura. Crafted by Pierre-Vincent Girardin, the thirteenth generation of a legendary family of winemakers from Meursault, this cuvée represents a bold, innovative, and highly successful venture outside his native Burgundy. The grapes come from a vineyard (clos) of only 0.8 hectares located at an altitude of 470 meters in the village of Rotalier, in the Jura, a prestigious area where natural wine icons reside. This vineyard benefits from a unique microclimate and a terroir very similar to that of Meursault, with a strong presence of active limestone and heavy clay. The vines are over 60 years old (some parcels were planted in 1922), which provides natural concentration, depth, and very low yields. The viticulture is organic in practice and the winemaking is of minimal intervention. Fermentation is carried out exclusively with indigenous yeasts and the wine is aged in 600-liter oak barrels (50% new) to limit the influence of wood and preserve the purity of the fruit. Bottled without fining or filtering to maintain its structural integrity, 'Le Noyer' Savagnin is made in the 'ouillé' style (topped-up, non-oxidative), highlighting the vibrant acidity, crystalline purity, and intense saline tension of the variety instead of the traditional oxidative notes of the Jura.

Tasting Notes Le Noyer by Pierre Girardin

Visual phase: Pale straw yellow color with brilliant golden reflections and a dense, elegant tear.

Olfactory phase: It stands out for Pierre Girardin's classic flint reduction, opening up to complex notes of quince, tangerine peel, oyster shell, nectarine, and green apple, accompanied by subtle touches of toasted almond and beeswax.

Gustatory phase: In the mouth it is sharp, vertical, and of great tension. It shows a magnificent saline energy with flavors of lemon, white pear, and apricot. Its texture is enveloping but guided by an electric and vibrant acidity that culminates in a long, saline, and deeply mineral finish.

Service Protocol

Serve at a temperature between 10 and 12°C in wide white Burgundy glasses. It is strongly recommended to decant vigorously for 45 minutes in its youth to dissipate the initial reduction and allow all its aromas to express themselves.

It pairs perfectly with baked fatty fish, poultry with light creamy sauces, sweetbreads, and cured cheeses from the region such as Comté.
