Description

Girardin Vin de France Savagnin Châtaignier is a masterpiece born from the audacity and talent of Pierre-Vincent Girardin, one of the most acclaimed and dynamic winemakers of Burgundy's new generation. This white wine represents a bridge between Burgundian technical precision and the untamed, vibrant character of the Jura terroir. Crafted from 100% of the indigenous Savagnin grape variety, it comes from a unique plot called 'Le Châtaignier', located in Vincelles, in the heart of the southern Jura.

The vineyard, originally planted in 1959, benefits from a southwest exposure that captures the afternoon sunlight, and a soil composed of Bathonian limestone and gray and blue marls, which provides a deep minerality and electric tension. The philosophy of minimal intervention guides the entire production process: practical organic viticulture, meticulous manual harvesting at the optimum point of ripeness, and spontaneous fermentation with indigenous yeasts. Aging takes place in custom-made 456-liter oak barrels to limit the impact of new wood and preserve the purity of the fruit, followed by a stabilization period in stainless steel tanks. The wine is finally bottled without fining or filtering, preserving its texture and natural energy.

The result is a modern, non-oxidative (ouillé) style Savagnin, which stands out for its elegant reductive profile, its citrus tension, and a saline persistence that captivates the most demanding sommeliers and collectors in the world.

Tasting Note Girardin Savagnin Châtaignier

Visual phase: Bright straw yellow color with subtle greenish reflections and steely flashes, of great clarity.

Olfactory phase: Complex nose and markedly reductive in its youth, with notes of flint (gunpowder), lime zest, green apple, fresh fennel, and a delicate background of sweet spices and white flowers.

Gustatory phase: On the palate it is tense, direct, and extremely linear. It presents a vibrant and electric acidity that guides the palate, accompanied by a dense texture and a saline mineral core. Long, persistent, and very refreshing finish.
