Description

Baynos Tinto is the magnificent letter of introduction of the García family (renowned for Bodegas Mauro, San Román, and Garmón Continental) in the prestigious Qualified Designation of Origin Rioja.

This cult red wine is born in the municipality of Baños de Ebro, in the very heart of Rioja Alavesa, a privileged enclave protected by the Sierra de Cantabria to the north and bathed by the Ebro River to the south. The Baynos project represents a return to the origins, seeking the maximum expression of the terroir through an artisanal and respectful viticulture. The grapes come from a careful selection of small plots of old vineyards, aged between 40 and 100 years, planted in the traditional goblet system on very poor clay-limestone soils.

The blend is mostly composed of Tempranillo (90%), complemented with a touch of Graciano (10%), which provides freshness, acidity, and aging potential. The harvest is carried out in a strictly manual manner, selecting the clusters in the vineyard itself.

In the winery, the winemaking process follows a philosophy of minimal intervention: the grapes are destemmed but not crushed, and the alcoholic fermentation is carried out with indigenous yeasts in concrete tanks, where it also undergoes malolactic fermentation. Subsequently, the wine is aged for 20 months in first-rate French oak barrels, achieving a perfect integration of the wood.

Baynos Tinto stands out for its aromatic depth, its ripe red and black fruit, its subtle spicy and mineral notes, and a superb palate, powerful and fresh at the same time, with silky tannins and a long, elegant finish. It is a wine of very limited production that embodies the timeless elegance of the Riojan Sonsierra.

Tasting Note of Baynos Tinto:

Visual Phase: Very intense cherry red color, high layer, with violet rims that denote its excellent youth and aging potential.

Olfactory Phase: Complex, deep, and very fragrant nose. Notes of ripe red and black fruit (raspberries, blueberries, blackberries) stand out, intertwined with floral notes (violets), spicy touches, licorice, pencil lead, charcoal, and a subtle background of very well-integrated noble wood.

Gustatory Phase: On the palate it is broad, powerful, and extremely elegant. It presents a fresh and lively entry, with a perfectly assembled skeleton. The tannins are silky and ripe, accompanied by a vibrant acidity that provides tension. Long, persistent, and refined finish, with fruity and mineral memories in the aftertaste.

Technical Specifications: Alcoholic strength: 13.5% Vol. pH: 3.7. Varieties: 90% Tempranillo, 10% Graciano. Aging: 20 months in French oak barrels.

Value Points

Unique Terroir: Coming from old vineyards between 40 and 100 years old in Baños de Ebro (Rioja Alavesa), cultivated in poor clay-limestone soils.

Ancestral Viticulture: Organic and biodynamic cultivation without certification, worked with animal traction to avoid soil compaction.

Artisanal Winemaking: Fermentation with indigenous yeasts in concrete tanks and 20 months of aging in French oak barrels.

Critical Recognition: Endorsed with 94-96 Robert Parker points (Wine Advocate), consolidating itself as one of the great aging red wines of modern Rioja.

Service Protocol

Service Temperature: Ideally serve between 16ºC and 18ºC.

Decanting: It is recommended to decant at least 1 hour before consumption to allow the wine to open up and express all its aromatic complexity.

Recommended Glass: Fine crystal Bordeaux-type glass to enhance the concentration of aromas and direct the flow of wine toward the center of the palate.

Professional Pairing: Excellent accompaniment for grilled red meats, roast suckling lamb, big game stews, traditional stews, and cured sheep cheeses.
