The Mussels in Pickled Sauce 6/8 by Los Peperetes represent the pinnacle of seafood preserves worldwide. Crafted by the prestigious family cannery founded by Jesús Lorenzo in 1990 in Carril (Galicia), this product is an authentic gastronomic treasure that fuses the richness of the Atlantic with artisanal know-how. Each can contains between 6 and 8 giant-sized pieces, meticulously selected from the best rafts of the Galician Rías, specifically from the Ría de Arousa, under the protection of the Protected Designation of Origin (D.O.P.) Mejillón de Galicia. The production process follows a centuries-old and strictly artisanal tradition. After their manual extraction, the mussels are cleaned one by one with warm seawater to remove any impurity and trim the beards manually. Subsequently, they undergo a precise cooking and are delicately fried in top-quality olive oil to fix their firmness and prevent them from losing juiciness. The soul of this preserve resides in its homemade pickled sauce, a secret recipe of family origin made exclusively with local natural ingredients: virgin olive oil, wine vinegar, premium sweet paprika, salt, and a subtle touch of bay leaf, pepper and clove. The packaging is carried out manually, placing each piece with surgical precision to guarantee an impeccable presentation upon opening the can.

Visual phase: It presents a bright, intense and uniform orange color, characteristic of large female mussels, covered by a pickled sauce of a translucent, clean and bright reddish tone, with golden flashes from the olive oil.

Olfactory phase: Clean and balanced aroma where the freshness of the sea highlights combined with the spicy notes of the pickled sauce. Nuances of sweet paprika, the noble acidity of the wine vinegar and a subtly balsamic background provided by the bay leaf and clove are perceived.

Gustatory phase: Incredibly fleshy, firm and silky texture at the same time. In the mouth, the marine explosion of the mussel harmonizes perfectly with the smoothness of the olive oil and the vibrant yet integrated acidity of the pickled sauce.
